Onion & blue cheese quiche
While we like to think of onions as simply adding flavor, they are a great source of nutrients by themselves. They are also delicious when cooked and combined with flavors like blue cheese so I just love to create a whole meal around them.
Ingredients for the base:
50g brown rice flour
30g sunflower seeds
Salt and pepper to taste
A pinch of turmeric
Water at room temperature
Mix all the ingredients together and then slowly add the water, folding the dough as you go along until you reach the correct consistency. Due to the nature of the rice flour you will reach a consistency somewhat like damp or wet sand, at which point you can spoon the mixture into a greased baking tin and distribute evenly with wet hands.
Ingredients for the filling:
3 large onions, peeled and finely sliced
1/2 tsp cumin seeds
A pinch of nutmeg
Salt and pepper to taste
120g blue cheese cut into small cubes
1 tablespoon honey
3 eggs
In a large bowl mix the ingredients together until evenly distributed. The eggs should be well mixed with the onions. Pour the filling over the base and press the onions down well.
Cook in the oven on medium heat for 45-60 minutes until the top is golden brown and the quiche is firm.
Allow to cool and enjoy hot or cold the next day!
