This is a healthy alternative to the sugar filled sorbets you find at the store. My kids adore this because it tastes exactly like fruit sorbet and I love it because it's 100% real fruit. I even let them eat it for breakfast in summer!
Ingredients:
Half a honey melon
100 ml unsweetened coconut milk
100ml water
2 tablespoons stevia
Peel and cut the melon into small pieces and freeze overnight. Once frozen remove and place into a blender together with the other ingredients. Depending on the size and strength of your blender you may have to split the ingredients into 2-3 batches. Blend until all the melon has been processed leaving a creamy sorbet consistency.
Place in a container and freeze for 2 more hours. Sprinkle some coconut shreds and enjoy!
