Coconut Flan
Ingredients
3/4 can unsweetened coconut milk
4 eggs
2 tablespoons organic honey
a pinch of nutmeg
a pinch of cinnamon
a splash of vanilla essence
Blend all the ingredients together until you reach a custard style consistency.
Pour into a shallow mould or 6 ramequins and place mould/ramequins into an oven dish.
Pour boiling water into the oven dish until it reaches about halfway up the mould or ramequins.
Cook about 45 minutes or until the middle of the flan is firm.
Place in the fridge for at least 4 hours.
Run a sharp knife around the edges and turn the mold upside down on a serving dish.
To serve sprinkle with some coconut shreds and enjoy!
No one will know how healthy this dessert is!
