Butternut squash and sweetcorn quiche
I just love quiches because you can disguise almost whatever veggie you like in them, sprinkle them with some cheese and almost call them a pizza! What kid doesn't want pizza every meal?
How to make the base:
100g Rice flour
50g ground flaxseed
50g ground sesame seeds
50g chia seeds
1/2 tsp turmeric
salt and pepper to taste
Mix all the ingredients together and slowly add water, mixing constantly until you reach a wet sand consistency. Due to the nature of the rice flour you won't end up with a dough so spoon the mixture into your baking tin and smooth it out with a spoon or with wet hands.
For the filling:
The pulp from 1 medium butternut squash (cooked in the oven for 45 minutes - 1 hour, deseeded and peeled).
250g sweet corn (equivalent to 2 ears of corn)
3 chopped garlic cloves
1 finely chopped onion
a handful of roughly chopped coriander leaves (you can skip the coriander if you so wish)
1/2 a teaspoon of cumin
100ml unsweetened coconut milk
1 tablespoon honey
3 eggs
freshly grated cheese to sprinkle on top
Mix all the ingredients together except the eggs and cheese until evenly blended. Add the eggs and continue to mix until smooth.
Pour over the base and sprinkle your cheese over the top for a pizza effect!
Cook for about 45 minutes until firm.
Let it cool and enjoy it fresh out of the oven or cold at any time.
