Beef goulash with German-style sweet potato knödel

Hands down this is my husbands favorite dish. He tells me that he looks forward to winter for two things: a lit fireplace and goulash! It's another dish that is just so delicious my kids don't even notice it's packed with vegetables.
Ingedients (4-6 portions)
1 red pepper, deseeded and sliced widthways
1 yellow pepper, deseeded and sliced widthways
200g button mushrooms, cut in half
2 large onions, peeled and sliced
3 tomatoes, cut into cubes
4 garlic cloves, peeled and sliced
salt and pepper to taste
1 1/2 liters of red cooking wine
2 generous tablespoons honey
1/4 tsp cumin seeds
1/2 tsp paprika
1/4 tsp cayenne pepper
1 tablespoon olive oil
1 1/2 kg lean beef cut into bite size cubes
Saute the garlic and the onions in the olive oil until lightly brown. Add the mushrooms and sauté a further 10 minutes. Add the beef and sauté until the beef is sealed from all sides. Add the peppers and sauté a further 10 minutes. Add the rest of the ingredients with half of the wine and bring to a simmer.
The secret to a delicious goulash is 1) wine wine wine - keep adding more wine as it cooks down 2) the cooking time - the longer you cook the goulash the more delicious it becomes!
I usually leave the goulash on medium heat to cook for 4-5 hours, stirring occasionally and adding more wine when the liquid gets too low.
This allows the flavours to really blend and for the beef to completely tenderize.
Once ready let it cool and dish up with the knödels and be ready for a siesta afterwards!
Ingredients for the knödels (makes 12 knödels)
3 large sweet potatoes, peeled, steamed and mashed so there are no lumps left
3 eggs
1/4 tsp ground nutmeg
salt and pepper to taste
2 tablespoons chia seeds
Mix the ingredients together until well distributed. While you form the knödels with your hands bring a pot of water to simmer. Add 4-5 knödels at a time to the water to cook. Do not allow the water to boil and do not cover with a lid. The knödels usually take 10-15 minutes to cook; once ready they will rise to the surface of the water so you can take them out.

Goulash Invernal con knödel de batata típicas alemanas
Este es el plato favorito de mi esposo. Me dice que le gusta el invierno por dos cosas 1) La chimenea prendida y 2) Por mi goulash!
Este plato es tan Rico que los chicos no se dan cuenta que está lleno de vegetales e ingredientes sanos, es un hit para todos.
Ingredientes (4 - 6 porciones)
1 morron rojo, cortado en rodajas
1 morron amarillo, cortado en rodajas
200g champiñones, cortados en el medio
2 cebollas grandes, cortadas en rodajas finas
3 tomates, cortados en cubos
4 dientes de ajo cortadas en rodajas
Bastante sal y pimienta
1 1/2 litros de vino tinto para cocinar
2 cucharadas de miel orgánica
1/4 cucharadita de semillas de comino
1/2 cucharadita de paprika
1/4 cucharadita de pimienta cayenne
1 cucharada aceite de oliva extra virgen
1 1/2 kg carne con poca grasa cortado en cubos chiquitos
Primero saltear el ajo y las cebollas con al aceite de oliva, hasta que quedan blandos y de un color marrón claro.
Agregar los champiñones y seguir salteando 10 minutos más. Agregar la carne y sellar bien. Agregar los morrones y seguir salteando 10 minutos más. Agregar los otros ingredientes con la mitad del vino y hervir a fuego lento.
En mi opinión el secreto para un rico goulash son dos cosas 1 - vino vino y más vino - cuando la salsa se empieza evaporar hay que seguir agregando vino y 2 - el tiempo de cocción - cuanto más tiempo de cocción mejor es el goulash!
Yo dejo el goulash cocinando durante 4 - 5 horas a fuego mediano, revolviéndolo a cada rato y agregando más vino cuando es necesario.
Esto hace que la carne se ablande y que los sabores se mezclen bien.
Una vez listo dejar enfriar un rato y servir con los knödel. Siempre es mejor hacer el goulash el fin de semana porque después vas a necesitar una siesta para recuperarte, ya que el goulash es tan rico te invita a comer más y más!

1/4 cucharadita nuez moscada molida
Sal y pimienta
2 cucharadas de semillas de chia
Mezclar bien los ingredientes. Mientras preparas los knödel con las manos en forma de bolas dejar una olla de agua hervir a fuego lento. Introducir los knödel de a 4-5 por vez en el agua caliente. No dejar que la aguar hierva, y no cubrir la caserola con la tapa. Los knödel normalmente tardan 10 - 15 minutos para cocinarse y cuando están listos suben a la superficie del agua. Sacarlos y servirlos calientes con el goulash!
